The sequel to the highly-praised, quick-selling 'Mull It Over' - a whisky matured in a 1st fill American Oak Bourbon cask and finished in a new Mulberry Wood cask: an Australian first!
This time we have taken a 2nd fill American Oak Bourbon cask and matured the spirit for two and a half years. This has then been transferred to the Mulberry Wood cask that finished the first whisky. We have doubled the length of the finish and left the spirit for just shy of 7 months.
The mulberry wood cask is from a boutique Italian cooperage that hand makes barrels, in only small quantities, from raw mulberry wood they have personally sourced and selected from sustainable cultivation areas in France and Hungary. We have resized the barrel and added a light char.
We have increased the bottling strength from the original release from 55% to 58% abv, as this is where we feel the best flavours and mouthfeel are achieved. But feel free to add water to find your own sweet spot - it swims very well!
No other distillery in Australia has yet released a Mulberry Wood cask whisky, so this remains a first for us and the Kinglake team.

Our Tasting Notes:
Nose: Earthy at first, like a damp rainforest floor; then sweet vanilla and bright orchard fruit notes
Palate: Malted honeycomb with a chewy mouthfeel; aromatic lychees bringing additional sweetness, floralness and a touch of acidity
Finish: A rich, long finish of Black Forest cake with smoked chocolate ganache
Distillery Tasting Notes:
Nose: Tobacco, Earth and Leather; Stewed Fruit; and a hint of Redskins
Palate: At first all the usual ex-bourbon characteristics of vanilla, toffee caramel and cinnamon
Finish: Then the mulberry influence brings rhubarb notes. The mouthfeel becomes oily and viscous before slightly medicinal peat rounds things out
