Working with Rod and Phil from Amber Lane Distillery was a no-brainer. They are making some of the most exciting whisky in Australia at the moment, following a multiple-cask journey maturation technique learned from the Cognac and Sherry traditions of Europe. It is no wonder that every single Amber Lane whisky release in 2023 won either a national or international gold medal.
Our whisky has been Double Sherry Cask matured - first in a French Oak Apera cask before being moved to an American Oak Oloroso cask from one of the most formidable sherry producers in Spain.
It has then had a short but powerful finish in an American Oak Tempranillo cask from acclaimed NSW producer Vinden Wines, which produces minimal-intervention, award-winning wines from organically farmed, family-owned vineyards and has been a 5 Red Star Winery in the world-famous James Halliday wine guide for the last 3 years.
We have used a 3rd Fill American Oak Bourbon cask as a settling cask to bring all the flavours together, resulting in a complex, sweet and savoury whisky that demands peaceful contemplation.

Distillery Tasting Notes
Nose: Rich and complex with notes of dates, stewed pears, cinnamon scrolls and red apple peel.
Palate: Sweetness of red apples, toffee, strawberries and cream, Jersey caramel fudge, Arnott’s Coffee Scrolls and raspberry Aeroplane Jelly crystals, counterpoised with savoury notes of roasted tomatoes and Spanish onions.
Finish: Long and warming with dominant notes of strawberries, cinnamon, and crumbled apple pudding with custard.
Our Tasting Notes
Nose: Vine-ripened sultanas; almonds; fresh vanilla pods; dried figs; and curry leaves
Palate: Juicy red apples; strawberry licorice laces; sweet, oven roasted capsicums; balanced by umami notes of miso butter and truffle oil
Finish: Raspberry lemonade; vanilla fudge; and hints of cloves with the earthiness of a freshly dug allotment.
